Ingredients

  • 1 cup goldenberries
  • 2 tablespoons dried goldenberries
  • 1 cup almonds, ground
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder

Directions

  1. In a small saucepan, combine the goldenberries, almonds, honey, and lemon juice. Cook over medium heat until the berries have softened and released their juices, about 5-7 minutes.
  2. Using a potato masher or a fork, mash the berries to break them up and release more of their juices.
  3. In a small mixing bowl, combine the mashed berries, almonds, honey, and lemon juice. Mix well until the ingredients are well combined. Set aside.
  4. In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time.
  5. In a separate mixing bowl, sift together the flour and baking powder. Gradually add the flour mixture to the butter mixture and mix until well combined.
  6. Divide the dough in half and press half of it into the bottom of a 9-inch tart pan with a removable bottom.
  7. Spoon the goldenberry mixture over the dough and spread it evenly.
  8. Roll out the remaining dough and cut it into strips. Arrange the strips over the top of the goldenberry mixture in a lattice pattern.
  9. Bake the pie in a preheated oven at 350 degrees F for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Let the pie cool to room temperature before serving.
