Ingredients

  • 1 cup amaranth flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted

Directions

  1. Preheat your oven to 350 degrees F.
  2. In a small mixing bowl, combine the amaranth flour, cinnamon, ginger, nutmeg, and allspice. Mix well until the ingredients are well combined and the spices are evenly distributed.
  3. Add the honey and melted coconut oil to the flour mixture and mix well until the ingredients are well combined and a dough forms.
  4. Roll the dough into small balls and place them on a baking sheet.
  5. Flatten the balls slightly with your hand and bake the cookies for 10-12 minutes, or until they are golden and crispy.
  6. Remove the cookies from the oven and let them cool slightly before serving.
